mesquite beans

Originally the South Plains was an undulating grass plains -- without the ubiquitous mesquite trees. Mesquites can be attributed to cattle drives, where cows feeding on mesquites deposited the beans along the trail. Mesquites took root, literally, and compete with native grasses for moisture.
